I recently got a new cookbook, and I felt like it was a true symbol of my new life as a M-F 9-5 employee.
I know that probably sounds weird, but when I was working retail, I was honestly just making meals to get by (financially and physically). I wasn’t spending any extra time or money on food, and a lot of my cooking for fun went out the window.
One of the first things I wanted to do when I got back to “corporate life” was cook from a cookbook (as opposed to finding recipes online), especially on the weekends.
All of that to say that I’m really excited to have Kristin Cavallari’s newest cookbook, “Truly Simple.”
The book cover says its 140 healthy recipes for weekday cooking. Honestly, I didn’t believe this at first.
How many cookbooks or recipes have you seen that say they’re quick, easy, simple… only to have you in the kitchen for more than an hour, making a big mess?!
I wasn’t sure how simple these recipes would be, but now that I’ve made some of them… I’ve been impressed with how easy and delicious they are!
The first recipe I made was the pimento cheese dip, which I loved! Next, I made Mediterranean meatballs with tzatziki sauce — very different and delicious.
Recently, I made simple balsamic-glazed sea bass with roasted tomatoes, and I served it with zucchini butter pasta. This meal looked so gourmet, but was so easy and light!
The book includes recipes for drinks, breakfast, salads, lunch, dinner, sides, snacks, dessert, and staples. Thre are so many recipes in here I want to try!
