I seriously spent this ENTIRE weekend adulting.
On Thursday, I woke up to the reality that Thanksgiving was just TWO weeks away — and between now and then, I’ve got a TON of shit to do, from work tasks, things around the apartment, and just general LIFE shit.
I felt incredibly overwhelmed, so I decided then and there, I’d be spending my weekend knocking out a pretty monumental to-do list.
I’m having a friend over for Thanksgiving this year, so I started making a grocery list of all the things I’d need — and I wanted to make sure we had a few extra goodies. It’s my friend’s FIRST time in Austin, so we’re going to do it big.
And the occasion calls for some stellar margaritas. So, I looked to one of my favorite cocktail-recipe-creators, Lauren Ariza. Sure enough, she’d whipped up some jalapeno simple syrup for homemade margaritas.
So, I did the same. It just takes two jalapenos roughly chopped (it’s your choice to remove the seeds and guts, I kept half for some spice), 1/3 cup of sugar, and a cup of water. Simmer in a pot until sugar is completely dissolved. Blend in a food processor, and strain, if desired.
Voila!
So for the margarita, I use:
- Silver tequila
- Splash of jalapeno simple syrup
- Squeeze of lime
- Top with lime La Croix (or any lime soda)

I also cooked up homemade enchiladas to get me through the week, using The Pioneer Woman’s recipe. It’s delicious!
What else did I knock out?
- Laundry
- A trip to Lowe’s (there’s now a balcony full of plants)
- Grocery shopping
- Hung any remaining photos on the walls
- Cleaned kitchen and bathroom

I’ll keep you posted on my progress, but it should be completed within the next few weeks — I’m recording all of the lectures right now. I’m really excited to unveil it!
